SPAGHETTI WITH SEAFOOD
100 g spaghetti pasta
50 g shrimps 16-20 pieces – circa
40 g calamari marinated in olive oil and lemon peel
30 g mussels without shells
40 g butter
20 g shallots
10 g garlic
10 g capers
10 g anchovies
40 ml white wine
40 ml fish broth
10 g parsley
1 g dried chilli peppers
salt and pepper – to your own taste
3 cloves garlic confit
A method of preparation:
Heat oil in a pan and fry the shrimps and calamari vigorously. When ready let it rest on a plate. Sauté shallots and garlic and add capers, anchovies and dried chili peppers into the same pan and heat it up further for about 2 minutes, while making sure the garlic is not getting burned. Pour in the white wine and wait until it slightly evaporates. Pour in the fish broth and boil for another 1-2minutes. Add mussels and butter right after. Boil everything in the pan together until the sauce thickens. Add cooked spaghetti and fried shrimps and calamari. Stir everything properly. Serve in a deep plate with garlic confit and parsley on top.
